What’s not smoked, braised or baked in-house is shuttled over from sister eatery Top Paddock. Will it be a brioche bun bursting with pulled pork and zingy celeriac remoulade, fall-apart ham hock, oozy poached eggs and bearnaise or an umami hit of mushies in gorgonzola cream with grilled asparagus and truffle pecorino on charred polenta wedges? All heavenly, all worth the weekend wait.
