Broccoli in garlic oil, charry cabbage in caramelised onion butter or buttered greens with a squeeze of lemon and a good grind of pepper. Whichever recipe you pick, your winter veg will never be boring again. As a general guide, Neil Perry shares his winter veg suggestions and boiling times: leeks, halved and cut into three-centimetre lengths - 3-5 minutes; savoy cabbage leaves - 1 minute; broccoli - 5 minutes; broccolini - 4 minutes; English spinach leaves - 30 seconds; Brussels sprouts - 5 minutes.
