Igni's Aaron Turner is opening a taco joint in Geelong

Good news in the midst of mayhem. Igni and Hot Chicken Project chef-restaurateur Aaron Turner is opening a taco bar on Little Mallop Street, Geelong.

Tacos y Liquor, a 36-seat venue (seating 18 inside and out), will have a simple menu of "four to five tacos and sides, with a lot of good booze," says Turner, who wants the operation to reflect Mexico's street stalls and taco trucks. "You'll come in, spill a few tacos on yourself, have a beer or tequila and be on your way."

Classic taco fillings, such as pork and pineapple al pastor cooked on the skewer, chicken, beef or mushroom for vegans, will be served on La Tortilleria tortillas. The bar will feature mezcals, tequilas, a couple of margaritas, a few rotating beers and just one red and white wine on tap from Little Rara. Turner says Hot Chicken Project, which is across the road and has a general liquor licence, can send some of its wines across the border if required.

Given current restrictions, Turner is hoping to launch the business as a takeaway venue within a few weeks, however he will be offering the opening menu in burritos instead of tacos. He reasons that "tacos don't travel well," while sturdier burritos, featuring rice and beans cooked in chicken fat, will survive transit.

As for Igni, Turner says he doesn't have plans to offer a dine-at-home option at this stage.
